Grilled kebabs on flatbread

Flatbread is one of the earliest breads prepared by people, dating back thousands of years. And we’re still enjoying it because it’s just so good. This recipe an easy one as you can basically add any ingredients you like to your flatbread and VERO plant-based kebabs. Here’s our take on it to get you going.

  • Ingredients (serves 2)

    • Cooking oil
    • 2 cloves of fresh garlic, chopped
    • 1 teaspoon of spices to your liking, for instance smoked paprika
    • 2 mielies
    • 250 gr (4 kebabs) VERO Spicy Chilli plant-based kebabs, defrosted
    • Handful of cherry tomatoes, cut in half
    • 2 fresh and soft flatbreads
    • Barbeque sauce
    •  

      TIP: For variation, use the VERO Smoky Barbeque or Flame Grilled plant-based kebabs.

  • Preparation (15 minutes)

    • Heat cooking oil in a frying pan until shimmering. Stir in garlic and spices and heat for about 30 seconds, distributing spices evenly across your pan.
    • Remove any husk from the mielies and add them to the frying pan. Cook over medium-high heat for about 2 minutes, then give each mielie a quarter turn and continue cooking for 2 minutes a side, moving mielies around the pan slightly to soak up all the spices. Repeat until all four sides are cooked and nicely seasoned. Your mielies will take about 8-10 minutes in total to cook.
    • Cut the kernels off the mielie with a sharp knife, as close to the bottom of the kernels as possible, slicing away from you. Rotate the mielie until all kernels are removed.
    • Heat a frying pan with oil and pan fry the defrosted VERO Spicy Chilli kebabs for 3-4 minutes until heated throughout. Or heat on braai, 2 minutes each side. After frying or braaiing, remove from skewers before folding into the flatbread.
    • Alongside the kebabs, pan fry the halved tomatoes.
    • Grill the flatbread for a couple of minutes on a grill pan to heat them up and get those nice grill lines.
    • Fold the VERO kebab chunks, the corn, sliced tomatoes, sauce and any salad greens into the flatbread, apply the barbeque sauce liberally, serve and enjoy!
