Buddha bowl

It’s hard not to notice Buddha bowls in restaurants and supermarkets. But what are they? The Buddha bowl has become synonymous for whole grain and veggie bowls with tasty sauces, so there are many ways you can make them. Allegedly, Buddha carried a bowl with him on his journeys and accepted food as donations. We suggest taking below as guidance and then adding or replacing items with your favorite veggies, grain or even noodles. The preparation time will vary depending on your ingredients, here we show option for brown rice and sorghum.

  • Ingredients (serves 2-3)

    • 180gr whole sorghum grain or brown rice
    • Salt
    • Cooking oil
    • 1 red pepper, sliced
    • 1 yellow pepper, sliced
    • A couple of tenderstem broccoli
    • A couple of baby carrots, cut in length into 2 halves
    • 250 gr (4 kebabs) VERO Spicy Chilli plant-based kebabs, defrosted
    • 1 red onion, finely chopped
    • ½ cucumber, finely chopped
    • 2 tablespoons of sesame seeds
    • 1 ripe avocado, sliced
    • Dressing of your liking, like Green Goddess, Sriracha mayo or Tahini dressing
    • Pepper to taste

      TIP: For variation, use the VERO Smoky Barbeque or Flame Grilled plant-based kebabs.

  • Preparation (35-55 minutes)

    • If you’re going for sorghum, it's recommended to soak overnight in 2 cups of water to shorten the cooking time.
    • Bring sorghum to a boil and then reduce heat to simmer for 50 minutes. For brown rice, add water to rice with some salt, bring to a boil and then simmer for 30 minutes or until soft.
    • Add a little cooking oil to a frying pan over medium heat and sauté the red pepper, yellow pepper, tenderstem broccoli and baby carrots until slightly softened.
    • Heat a frying pan with oil and pan fry the defrosted VERO Spicy Chilli kebabs for 3-4 minutes until heated throughout. After frying, remove from skewers and cut into smaller pieces.
    • Mix the chopped red onion and cucumber.
    • Toast sesame seeds in small frying pan for a minute or two.
    • Place sorghum or rice into a large bowl, add the softened vegetables on top, add the VERO kebabs pieces, the red onion and cucumber mix.
    • Finally top off with sliced avocado, toasted sesame seeds, and drizzle with dressing.
    • Add pepper and salt to taste.
